Avgolemono Soup

Avgolemono is a traditional soup that originates from two words. Avgo, egg and lemono, lemon.

The dish starts with fresh chicken stock and then, rice is added and slowly cooked.

Fresh eggs are slowly mixed into the soup, before adding lemon juice.

Made in most Greek homes when someone is feeling under the weather, this hearty soup is often served with chicken and perfect for a cold Calgary evening.
